1. Not all herbs and spices go together in the same dish. For best results use those that complement each other and use in the right ratio.

2. In cooking, add herbs/spices a bit at a time to allow flavors to develop. Add more until the right balance is achieved and you can taste the difference in the dish.

3. Store dry herbs and spices in airtight dark containers in a cool, dry place away from direct light. Fresh herbs should be stored in zip lock plastic bags in the refrigerator.

4. Dried herbs and ground spices can keep for up to a year, if stored correctly. Whole spices can keep for up to two years. They will have lost their flavor after these times.

5. There are four main mood enhancing herbs: Chamomile calms stress, lavender relieves insomnia, lemon balm  relieves anxiety, and St. John’s wort boosts the mind.

6. When planting herbs, for best results use clay terracotta pots that have first been soaked thoroughly in water.
